Japanese Rubyfish (Erythrocles schlegelii) is wild caught in the Indonesian waters of Bali and East Nusa Tenggara (WPPNRI-573) using traditional handline fishing. Responsibly sourced from local fisheries, only mature fish with a minimum harvest weight of 715 g and minimum length of 42 cm are selected to support responsible harvesting while ensuring premium quality, freshness, and full traceability. Firm white flesh with a mild, delicate flavor.
