Coral Trout (Plectropomus spp.) is wild caught in the Indonesian waters of Bali (WPPNRI-573) and Teluk Saleh, Sumbawa, NTB (WPPNRI-713) using traditional handline fishing. Responsibly sourced from local fisheries, including a Fishery Improvement Project (FIP) in Teluk Saleh, only mature fish with a minimum harvest weight of 700 g and minimum length of 35 cm are selected to support responsible harvesting while ensuring premium quality, freshness, and full traceability. Prized for its firm white flesh, delicate sweetness, and clean flavor, Coral Trout is a premium choice for fine dining and Asian cuisine.
